Rub 4 thick-cut pork chops with 4 tablespoon olive oil. Season all sides generously with 2 teaspoons salt and 1 teaspoon black pepper. Pork needs a heavy amount of salt to bring out the flavor. Salt with a heavy hand when it comes to a thick pork chop.
Heat an oven-safe heavy skillet over high heat. Preheat oven to 400 degrees Fahrenheit.
Sear the pork chops in the skillet for 2 minutes on each side.
Transfer the skillet immediately to the oven and cook until the pork chop reaches an internal temperature of 145 degrees Fahrenheit, about 15 minutes.
