Made this for dinner last night. It was SO good! Everyone raved about it! It was certainly easy to make, and perfect for a side with ribs. It was 106 degrees outside, here in Pennsylvania, so cold corn was a much better option than hot corn on the cob!

Yum! I had extra frozen fresh corn from our garden, so I tried it and it was wonderful… I’m

Omgawd! This was so yummy. I actually forgot to buy the cuke and avocado so I just added more tomato. I agree with another poster that this would be yummy as a lunch. I can’t wait for lunch tomorrow lol. Thanks for a refreshing, delish dish!

from your Italian buddy you are a super chef. I have tried many of your recipes and not making any changes they work just fine . Your recipes are similar or almost the same as my Italian home mom use to make . My favorite on Friday is clam sauce with added shrimp and macaroni. Its great with garlic, olive, parsley etc. If you want let me know.
