Can I use other cheeses? I have not mozza, do have gouda, monteray jack, cheddar, swiss, provolone.

Made these for dinner 3 nights ago, and making them again for dinner tonight. They are fabulous!!! When my son came home from work and had one, he said, “mom, these are really good. They taste like pizza pizza calzones.” Then he corrected himself, and said, “actually, they are better than pizza pizza’s, and they have more stuff inside too. ” I made them a per your recipe, except I used about 3 cups of mozzerella, only because that’s what i ended up shredding.”
I thoroughly enjoyed mine, as did my husband. Looking forward to having it again tonight. Thank you!!

In reply to Peggy loss. This is just a different take on a calzone with different filling. I don't know why that would merit a 1 star review. Personally I also like mine with ricotta, but that doesn't mean this recipe won't be others' ideas of perfect.

Chef Rachel, you’re a terrific teacher—you make it seem easy. . I don’t have a stand mixer, have been kneading a lot, but my hand mixer has dough hooks, which I’ll try for these calzones. Also, I guess the sausage has spices, as you didn’t add any to the filling. SYL
