Another delicious recipe! I had to substitute some of the ingredients, but TSAHC team has taught me that most recipes can be tweaked without ruining them. (I’m such a rule follower!) Ha! I forgot to buy the green chilies, so I went with a can of Rotel tomatoes w/green chilies. Also used a mix of Monterey Jack and sharp cheddar on top with fine shreds of sharp cheddar added in with the chicken mixture. Fabulous! Thanks again for the winner chicken enchilada dinner!

nope! You’ll just have slightly smaller enchiladas and more of them as corn tortillas are generally about 5 to 6-inches in diameter.

I’m a Texan! This was delicious! My green chilis were accidentally hot. I didn’t know they came hot. So I put fewer in. Otherwise I made it as written! This is going in my family cookbook !!

I cooked my chicken breasts in my instant pot to have yummy shredded chicken in the enchiladas, in the instant pot I added sweet onion, a can of Rotel tomatoes, cumin, black pepper, garlic, and about a cup of chicken broth. Cooked at high pressure for 25 minutes with a 20 minute natural release. I added a little extra cream cheese, can of drained & rinsed black beans, red bell pepper, & poblano peppers to the chicken mixture. Everything else I did just to the recipe. This turned out so incredibly bomb! Will make again and again!!! Thank you!]]> 5 stars
