I’m sorry to hear the beef turned out chewy and hard! It sounds like the beef might have been overcooked or not the best cut for this recipe. For beef stroganoff, it’s essential to use a tender cut like sirloin or tenderloin, as these cook quickly and remain tender. If you’re using a tougher cut, like chuck or round steak, it can become chewy unless it’s cooked low and slow, which isn’t ideal for this recipe.

Also, when cooking thinly sliced beef, it’s best to sear it quickly over high heat for just a minute or two per side. Overcooking even a tender cut can cause it to dry out and become tough. If your beef cooked for longer than recommended, that could explain the texture. Next time, try to cook the beef in batches to avoid overcrowding the pan, ensuring each slice gets a quick, hot sear. Hopefully, these tips help you get perfectly tender beef next time!

I just made this tonight and, OMG, it is SOOO good! I did take your advice for a thicker sauce and added a corn starch slurry. My husband and I are both looking forward to the leftovers for our lunch tomorrow. I absolutely love the QR Code feature of your cookbook so I could watch the video.

I’m sorry you had a bad experience! Is it possible you forgot to dust your steak with flour? This flour ends up acting as a thickening agent for the rest of the sauce. 1/4 cup of flour should be plenty to thicken the sauce.

Sorry but I was so disappointed. I followed the receipe to the letter and the sauce was bad … so thin. Not happy with it.

The best beef stroganoff recipe I have found. I added a little garlic but otherwise followed the recipe and was so very pleasantly surprised.

Very good and tasty recipe , but I needed to add some corn starch to help with the thickening. The family all enjoyed this, and would have it again!

Yummy, but It needs something. Maybe I didn’t have enough steak. Too many noodles for me also.

This is very similar to what I cook. I don’t use Worcester sauce but add white wine, bay leaf and 1-2 minced cloves instead. I add them together with onion and let the wine nearly evaporate. As I was interested in the origins of the meal some time ago I feel your and my variations are very close to it. I love this meal beacause it is original and is not similar to anything else.
Another variation is with a very little tomato paste and red wine. Also very good.
