I just made these for the first time and overall I am pretty pleased with how they turned out. I have never had the real thing from Trader Joe’s (Canada does not have Trader Joe’s) so nothing to compare them to, but these are good. I was able to get 40+ cookies. I wish I could thin the chocolate a little bit as it seems quite thick, but that could be part of what makes these cookies great! Hoping family and friends will enjoy them this Christmas, and if so, they will make a return appearance next year!

In reply to Cotter Crunch. I've had some success with GF Cup 4 Cup flour when making cookies. Other times I use a combination of almond flour and tapioca flour.

I was so sad when Trader Joe’s was sold out of their peppermint Joe Joe’s this year, but thankfully this recipe filled the void! I would dare to say that they taste better because they’re fresh too. Thank you for saving the holiday season!

I thought the photos looked like the real thing, but I worried that perhaps, beneath the chocolate robe and candy cane sprinkles, there might be a disappointing cookie. Was I wrong, wrong, wrong.

The recipe for the cookies was perfect. They were tasty in a bland way (so as not to compete with the cream center), and sturdy enough to hold their shape when pressed down to seal the filling.

I opted for Ghirardelli dark chips, since I like dark chocolate, and the cookies would have been too sweet for my taste if I had used semi-sweet.

The cookies look just like the real thing, and were at least as good! My only complaint is that the cookie recipe didn’t make anywhere near 36 cookies. Even though I sliced them thinly, I still only ended up with 20. I also ended up with enough filling for another 20 (which I plan to make as soon as these are finished).

In reply to Katie. I used gluten free flour and it worked great. I used sprouted gf flour blend from To Your Health, Sprouted Flour Company (one of the best GF flours I've found so far, and much healthier since they are sprouted!).

These cookies are very time consuming to make BUT they are so good. I changed nothing in the recipe and wanted to thank you for making me look like I can bake. I’ve cooked a lot of your recipes and all of them are delicious. There is a down side to it thou. Now my wife wants me to cook all the time, but because of your recipes I really don’t mind doing it.
Thanks for making it easy.
