In a large mixing bowl, whisk together 2 cups all-purpose flour, 1 tablespoon minced fresh parsley, and 1/2 teaspoon ground nutmeg.
In a separate bowl, lightly beat 6 large eggs
Gradually add the beaten eggs and 1/2 cup milk to the flour mixture, alternating between the two. Stir until you achieve a smooth batter. Let the batter rest at room temperature for 30 minutes.
While the batter is resting, bring a large pot of salted water to a boil.
Once the water is boiling, pour the rested spaetzle batter through a spaetzle maker or the holes of a colander directly into the boiling water. Small, elongated drops of dough will fall into the water.
Cook the spaetzle until they float to the surface, about 2-3 minutes. Use a slotted spoon to remove the spaetzle from the boiling water and transfer them to a bowl.
In a large skillet, melt 1/4 cup salted butter over medium heat. Add the drained spaetzle and cook for 2-3 minutes, stirring occasionally, until lightly golden. Serve hot.

Notes
If you don’t have a spaetzle maker, you can easily use a colander, cheese grater, or slotted spoon instead. Simply hold the tool over the boiling water and pour the batter through, using the back of a spoon to push it through the holes.
