chopped onions
about 1 medium onion

chopped celery
about 3 celery ribs

chopped carrot
about 4 carrots

minced garlic

cubed potatoes
about 3 potatoes

chopped green beans
fresh or frozen

cup
corn kernels
fresh or frozen

teaspoon
dried thyme
1
teaspoon
dried oregano

(14.5 ounce can)
diced tomatoes
undrained

vegetable broth
Salt and pepper
to taste
Instructions
In a Dutch oven, heat butter and olive oil.
Add onions, celery, and carrots. Sauté until onions are softened but not browned.
Stir in garlic, potatoes, green beans, and corn. Continue to sauté for an additional 4-5 minutes.
Sprinkle in thyme and oregano, and mix well.
Pour in the diced tomatoes and vegetable broth. Bring the mixture to a boil.
Reduce heat and let the soup simmer for 20-25 minutes.
Season with salt and pepper to taste. Serve warm.
